I have been on the hunt for breakfast recipes that are quick, simple, and hormone friendly for us busy ladies.
My criteria is that I need something that is gluten free, dairy free, delicious and grab and go.
My other criteria is that is needs to be full of whole foods, fiber, fruits, and healthy fats
My goal is to show you that even with dietary restrictions, allergies, digestive issues, and almost no time at all, you can still keep your blood sugar stable, stress levels down and body cranked up into fat burning vs fat storing land.
So here is a quick recipe I put together that turned out way better than I planned and even better, it was crazy simple to make! I am the kiss of death for baking usually, but I even figured these out 😉
(Gluten free and dairy free for all my allergy babes)
1/4 cup coconut flour
2 tbs melted coconut oil
1 tablespoon real honey
1 tsp ground cinnamon
1 tsp vanilla extract
3/4 tsp baking Soda
1/4 tsp sea salt
Throw it all in a blender and puree
Put on baking sheet in little pancake circles
Throw in the over at 350 for 23 mins
Drizzle with honey if desired 😉
Pack and Go!
I grab about 2-3 of these and stick them in ziplocks for the road. I usually eat it with a coconut or almond milk chocolate protein smoothie as my drink/protein.
In fact, I will be traveling this week and plan to take a few with me for the flight! They are great warm or cold.
